About Hollow Rock

We’re bringing an exciting new attraction to Gibraltar, combining an immersive experience, an on-site brewery, a unique Cave Bar and an extraordinary events venue. As we get ready to open our doors, we’re looking for passionate, energetic and welcoming people to join our team and help shape a new chapter in Gibraltar’s hospitality and entertainment scene.

The Role

We’re looking for enthusiastic, friendly and energetic Hollow Rockstars who love hospitality and making people feel welcome.

More than welcoming guests, serving drinks and guiding visitors through our experience, you’ll play a key role in bringing Hollow Rock to life. From sharing the stories behind our beers and spirits to showcasing Gibraltar’s rich heritage, you’ll help create unforgettable moments for visitors from around the world. You’ll be a true Hollow Rockstar – a passionate ambassador for Hollow Rock and everything that makes Gibraltar unique.

Key Responsibilities

• Be a true Hollow Rock Rockstar: positive, energetic, approachable and proud of the experience.
• Welcome guests from all around the world in a friendly, confident and professional manner.
• Operate the POS system and handle card and cash payments accurately.
• Learn the story behind Hollow Rock, discover our range of beers and spirits and confidently share their unique characteristics with guests, as you’ll also be guiding groups through the experience.
• Serve beer, spirits, wine, soft drinks and other beverages.
• Prepare and serve beer & spirits tastings.
• Keep the tasting area clean, organised and well presented.
• Replenish fridges, glasses, tasting stock and other supplies.
• Monitor stock levels and report shortages or discrepancies.
• Follow responsible alcohol service procedures at all times.
• Maintain high standards of hygiene, food safety and health & safety.
• Assist with opening and closing procedures.
• Support private events, groups, cruise visitors and special activities (flexibility and availability to work weekends and public holidays is a great advantage).
• Help visitors with general questions about the Hollow Rock Experience and Gibraltar.
• Work across different areas of the experience, including ticketing, the Cave Bar, tasting area and shop, adapting to the needs of the team and our visitors.
• Support colleagues during busy periods and contribute to a positive team atmosphere.

Who We’re Looking For

We value personality, enthusiasm and a genuine passion for hospitality. You should be friendly, reliable, proactive and comfortable working in a busy team environment.

Good spoken English is essential, and additional languages are a strong advantage. Previous hospitality experience is preferred, but the right attitude and willingness to learn matter just as much.

Flexibility is essential, as shifts will include evenings, weekends and public holidays.

Key Responsibilities

• Welcome guests from all around the world in a friendly, confident and professional manner.
• Be a true Hollow Rock Rockstar: positive, energetic, approachable and proud of the experience.
• Serve beer, but not only - as we also do spirits, wine, cocktails and soft drinks.
• Learn and confidently explain the different Hollow Rock drinks and their characteristics.
• Prepare and serve beer and spirits tastings.
• Serve simple food and snacks where required.
• Operate the POS system and handle card and cash payments accurately.
• Keep the bar, tables and guest areas clean, organised and well presented.
• Replenish fridges, glasses, bar stock and other supplies.
• Monitor stock levels and report shortages or discrepancies.
• Follow responsible alcohol service procedures at all times.
• Maintain high standards of hygiene, food safety and health & safety.
• Assist with opening and closing procedures.
• Support private events, groups, cruise visitors and special activities.
• Help visitors with general questions about the Hollow Rock Experience and Gibraltar.
• Work flexibly across the Cave Bar, tasting area and other visitor-facing areas when required.
• Support colleagues during busy periods and contribute to a positive team atmosphere.
